Obviously they would fit, but it wouldn't provide a very goods tyre profile....

Also you would have to run higher pressure's to avoid muchos tyre foldage (Y)

Maxxis are quite stiff tyres. I ran a michelin comp 24 2.5 on a 521 for ages at low pressure and never experianced tyre fold.

Give the 2.5 a try first, as I personally believe minions have a nicer tread pattern than high rollers.

it depends how you ride! as i found with my d521/2.5 high roller i had!

cause when i gapped i sorta fliped the bike to one side as i landed! if you get what i mean (Y) so you land atr an angle! so i went down to the 2.35! :)

that was with single ply though!

i would personally say go for the 2.35 high rollers!
