Are particles created or is it a result of particle collision

Soyrr for this topic but maybe someone can help.

When two particles collide in a particle collider, do they physically collapse into other particles they are built of or are these particles created as a result of the energy of collision? You know, the energy = matter formual.

Missus seems to think it's physical collapse, I think it's the latter. Loads of energy from the speed of particles being converted into new matter, bosons quarks gluons etc.

As far as I am aware they are "extracting" existing materials from the particles, I did not follow that part that closely if I want to be honest.

I believe it goes: particle x collides with another x, creating a new and heavier particle y. In order for two x to become y, one or both x have to give up some atoms, which then collide with other atoms creating new particles.
