Your best bet is 18:12 on a mod or 18:13 if you find 12t on the rear too hard, the majority of mod riders use 18:12.

You can use any freewheel, if you're just starting out I'd go with a Tensile, cheap and relatively good for the price, get an 18t freewheel up front and a fixed 12t sprocket on the rear.

Not sure on your cranks but you might have to buy new cranks with a thread instead of a bolt on sprocket which the old T-Birds used to come with.
