turning a mod into a stock

Why is it that a lot of stock frames are equipped with a solid CNC bottom bracket yoke that the chain stays are welded onto, while on most mods the chain stays are welded directly to the bottom bracket? For me that's the biggest difference between a mod and a stock frame. Wouldn't mods also benefit from this type of set-up?

Also, stock frames usually only have rim brake mounts.

It's much easier/cheaper not to run a CNC BB yoke, but given that on a stock you're cramped for space (unless you go making the stays 390+) it's somewhat necessary. On a mod you've got much more room to play around with so it's a simpler task to just weld the stays on there.

In response to OP: if you're buying all these different bits and bobs separately, you'll likely be better off looking for a second hand full-build.

As has been discussed at length already, you CAN run most your mod parts on a stock, but it'll almost certainly ride horrendously.

If you're looking at spending a fair wedge anyway, for a small amount more you'll probably get a decent, mid-range, second hand complete.

This. It's way more hassle than it's worth, much easier and better value for money to buy a complete stock, selling the mod if needs be.

I went from 158's on my mod to 170's and they felt gash, everything was too light and any rolling move over a small crawling pace was near on impossible.

Even now I'm on a 24 echo I'd still like to try 165's because of how light 18-14 feels.

How tall are you? I think people with long legs can benefit from long cranks.
