Hydraulic Brake :(

I mean, even if I didn't ride all winter- and just left it in the garage 'til spring. Frozen, then melted again- would it f**k the insides up?

I'm probably going to have to re-bleed with anti-freeze. If I do it in the bathroom sink, how much antifreeze do I need to put in?

I wouldnt use Antifreeze, its a poison and will strip paint

What you need is food grade Glycol, but you also need a anti corrosion addative and a bacteriacide stuff as bacteria will grow in it.

To be honest just use oil, brake fluid and hydraulic oil are two totaly different things, I assume the car brake fluid is incompatable with the seals, it usually makes them swell up as it reacts with the rubber type stuff used in them.

So should these be filled with water or oil? being new to this I havent a clue, just know about hydraulic systems being an engineer

Discs need to be bled with oil (obviously), the type depends on the brake. Some use mineral oil, some use DOT fluid- neither being compatible with the other (in theory). Magura rim brakes don't suffer from heat build up so you can get away with getting imaginative. Lots of people use water (I ran a Maggy for years with pure water with no problems at all) with various additives because it gives the lever far lighter feel and better response. WD40 also gives a similar result I've heard.

If it freezes, the water expands and pushes your pads out a bit. It's pretty much no different to pulling your brake, really.

Using anti-freeze with water is fine in Maguras - wasn't an issue for me in the many years I used it.
