Im after a lovely beef chilli con carne recipe if anyone knows of a good n. And didn't you ask this one a while back? beef mince, onion, sweet pepper, mushrooms, tomato's (tinned or tinned and some fresh), kidney beans a tin of heinz baked beans (trust me on this one) Cumin, Coriander, chilli powder, paprika, salt & pepper a small bottle of beer also. Nacho's, cheese and rice. Chop.. brown mince... then add to a large cooking pot/sauce pan... mix... taste... simmer for at least an hour (the longer its cooked for the better i think)... Don't add all the baked beans unless cooking for +5. when cooking you rice do you know to rince it mega well.? Start off small and keep tasting, i always add pinch/tea spoon at a time, go easy on the coriander and cumin, but plenty of chilli to taste preference. Miss-Higgy Posted November 4, 2011 Report Share Posted November 4, 2011 Ok for guessing sake.. 1 tsp cumin, 1 tsp coriander, 1 whole small chilli, 2 tsp of paprika (added to mince with salt and pepper 1 pinch of salt and preferred amount of pepper) and 3-4 tsp of chilli powder this is a guess its roughly what id use, but you may want to add a little more of each. Hence it only being a prod I'm not so sharp with spices, I usually guess and it turns out not very flavoursome, so if I have something to go off I can taste it and think 'bleugh, that flavour is too strong, I'll use less of that' and such like. Simpson Posted November 4, 2011 Report Share Posted November 4, 2011 (edited) Brown all the mince you need Sieve it and get all the water out chuck that into a large casserole dish add chilli con carnie powder (like discovery mix or something again enough as the pack said you need) rub that into the mince Add enough chopped tomatoes so it wont burn in the oven but not too much so its watery add a big squirt of tomato pure (pure'ay) add a good sprinkle of pepper salt and cumin A spoon full of easy chilli if you have any. Add enough kidney beans you need. Put a lid on the casserole dish Then wack the whole thing in the oven at like 170 degrees for 50 mins or so, the longer you cook it the better really, especially if your using cheaper mince. Piece of piss to do at a BBQ or something because literally wack it in the oven and forget about it, just stir occasionally. Like you can do all the prep work before anyone arrives and so an hour before you all want to eat just bung it in the oven.... sorted! PS: I'm not a good "chef" but its easy to do tastes great and everyone will be pissed anyway so it doesnt matter.
