Swapping to a disk rim will cost money and provide zero benefit, it will also mean you'd need to change wheel should you choose to go back to a rim break at any time. I believe the Fatty R have a standard mount so a #5 caliper would allow you to use a 160 rotor. You may want to verify this bit though. Beaten to it.
