Make sure they have sealed hubs. A Hope Pro2 Trials for the rear is the most popular choice. And pretty much any rim if you're a beginner as long as it's wide and drilled really.

And for the front, anything sealed as front hubs don't see much stress, echo, hope, anything. And front rims aren't too important either, as long as it's suitable for the brake that you're going to be using. :)
