Same thing with the Avid SD5, I would go for the SD7. Was by far the best brake I ever had, with heatsink Coust pads. odd to get use to, I'm use a loud brake. It works well, very well its just more a swoooch more hold but less bite I found. Never used ultimates as they are just that bit expensive for me, But I bet there stiffer than SD7.... The Shimanos have their whole 'parallel linkage' thing which tends to develop play after a while. The SDs would serve you well Just remember, the arms only play a small part in the overall brake though - make sure you couple them with a decent quality outer cable and set it all up properly.
