Decent mounts, a booster and not to mention great pads will have much more of an effect of say avid ultimate arms over Shimano Deores. Yup , careful setup can make the difference between the same hardware resulting in an OK brake and a superb one . In my experience , the calipers themselves needn't be terribly exotic - I get easily controllable locking power using cheapo Deore arms .
