It'd be worth doing because I don't think anyone else has tried it yet and you'd have maybe slightly lower maintenance/weight.

It wouldn't be worth doing because trials bikes don't roll and there's not really a good reason to spend the money on super nice bearings.

As far as I know the major advantage of ceramic bearings is that they last longer in extreme weather conditions so are very good for mountain bikes. Apart from that they are pretty similar so it is pointless getting them for a trials bike, especially at the extra cost.
