The multi-piston brakes don't actually have a larger slave cylinder, its just they use more pistons for better heat dissipation and more modulation. That lever on eBay would be ruuuuubbish on one brake!

Both! The Team stem is looowww, if you like street bashing then it's good, too low for natural though. High stems make the bike flatter on the rear wheel, not more vertical.
